BAKING INSTRUCTIONS/FAQ

 

How do I bake my frozen hand pies? 

DO NOT DEFROST.

Preheat oven (or toaster oven) to 375 degrees.*

Remove hand pies from plastic and place on a baking sheet lined with parchment. 

(Optional but delicious): after removing from freezer, let sit for 5-10 minutes and brush an egg wash on for a golden shine. 

If you have a fruit hand pie, sprinkle generously with turbinado sugar (or regular sugar if you don't have turbinado) after brushing with egg.

Bake approximately 25-35 minutes until the hand pie is golden brown all over (like photo). It's better to overbake than underbake! Make sure it's also golden brown on the top and not just sides. If the sides are browning too quickly, lower oven temperature by 25 degrees. No part of the hand pie should be "pale". The timing is approximate: please go by sight rather than time.

If your order came with a dipping sauce, remove sauce from plastic container and warm in microwave (if applicable).

The hand pie should be a golden brown like the image below:

How do I bake my frozen lattice pie? 

DO NOT DEFROST

Preheat oven to 425 degrees with a baking sheet positioned on the middle rack. 

Unwrap pie.

Let sit for 10 minutes or so then brush pie with egg wash (beat one egg until frothy).

Sprinkle pie with a coarse sugar like turbinado (Sugar in the Raw). If you don't have turbinado, regular sugar also works. 

Place pie on baking sheet and bake for 20 minutes at 425 degrees.

Rotate pie and decrease oven temperature to 375 degrees and bake for an additional 50-60 minutes or until filling is bubbling and perhaps flowing onto baking sheet. It will puff up a bit. It is better to overcook than undercook! Crust should be golden brown, even in the center. If the outer crust is browning too quickly and the center is still pale, cover the outer rim with aluminum foil.

Let cool to room temperature before slicing so the pie will set correctly (this is important!). Plan for 2 hours to cool!

How do I bake my frozen fruit pie with crumb topping? 

DO NOT DEFROST

Preheat oven to 425 degrees with a baking sheet positioned on the middle rack.

Unwrap pie.

Place pie on a parchment-lined baking sheet and bake for 20 minutes at 425 degrees.

Rotate pie and decrease oven temperature to 375 degrees and bake for an additional 50-60 minutes or until filling is bubbling and puffing up and the crumb is golden brown. It is better to overcook than undercook! If the crust is browning too quickly and the filling isn't bubbling yet, cover crust in aluminum foil while leaving the rest of the pie exposed.

The pie may be dripping and making a mess on the sheetpan. This is a good sign! 

Let cool completely before slicing so the pie will set correctly (this is important!). Plan for 2 hours to cool!

How do I store my pie? Does it need to be refrigerated?

Fruit/nut pies and other high sugar pies like PECAN PIE can be covered loosely in plastic wrap and kept at room temp for a day or 2. They can be kept in the refrigerator if a longer shelf-life is needed. For best results and a tender, flaky pie crust, place your pie in a preheated 350 degree oven for about 15 minutes and then cool to room temp (the crust should feel hot when you touch it).

PUMPKIN PIE should be kept refrigerated and brought to room temp before eating. For a crispier, flaky crust, refresh the pie in a preheated 350 degree oven for 10-15 minutes and then cool to room temp.

Quiche and key lime pies need to be refrigerated.

 

I bought a frozen shell. Now what?

Parbake:

Most single crust pies need to be parbaked (this means the crust gets partially baked in advance and then returns to the oven with the filling). If you're baking a pumpkin pie or any other single crust pie, follow these instructions: 

Preheat oven to 400 degrees. 

Remove plastic wrap and place parchment paper in the pie shell. (Tip: crumple parchment and then flatten for a better fit.) Fill TO THE CRIMP RIM with dried beans or rice.

Place in the oven for 10 minutes. Rotate and bake for another 10 minutes.

Remove from oven and take out the parchment and beans. Poke crust throughout with a fork.

Return to the oven and bake an additional 5-6 minutes, or until the crust looks dry and the edges are slightly browned but the bottom of the shell is not at all browned. Keep an eye on it during this step, as the crust can puff up in spots and may need a poke with a sharp knife.

Blind bake: 

*these instructions are approximate, as all ovens are different*

Blind baking is like parbaking except that you're baking the crust all the way since it won't return to the oven (this is for cold pies like banana cream pie, chocolate cream pie, etc). 

Following the above instructions but instead of taking the shell out after 5-6 minutes, keep it in the oven until the edges are golden brown AND the bottom is also browned in spots.

How do I reheat my quiche?

If possible, allow to warm to room temp before heating. Place in a preheated 350 degree oven for about 25 minutes (or until heated through). Toaster ovens are also a great option. If a microwave is your only option, cut into individual slices and heat at 50% power for 3 minutes. 

Freezing your quiche is also a great option! Slice and wrap well before freezing then warm in a toaster oven until hot. 


How do I bake my frozen chicken pot pie? 

DO NOT DEFROST

***The following instructions are approximate since every oven is different. Go by sight rather than time for a perfectly baked pot pie.*** 

Preheat oven to 425 degrees. (If you don't have an oven thermometer, I highly recommend getting one!)

(Optional but recommended: Unwrap and let sit for approx 15 minutes then brush top crust with egg wash and sprinkle with kosher salt and pepper.)

Place pot pie on a parchment-lined baking sheet and bake for 25 minutes at 425 degrees. Rotate 180 degrees and lower temp to 375 degrees. Bake another 50 minutes or until the entire top crust is golden brown and the filling is bubbling. It should look like the image below. It is better to overbake than underbake! Make sure it is golden brown, even in the center. If the edges are browning too quickly, you can cover just the outside with aluminum foil. 

  

How do I buy your products?

Roughly once a week I will send an email to my subscribers with the current week's offerings. Act fast because they never last long! Pick-up is typically a day or two later with delivery available for a fee (within a 10 mile radius of my address).

Why is it sometimes that you send your email but the order link isn't live?

Because I've reached a high volume of email subscribers, Shopify will send my emails out in batches. When the link is live immediately, some subscribers would receive the email hours later and products would already be sold out. In an effort to level the playing field, I will sometimes send the email first with the link going live a few hours later. Set an alarm on your phone so you don't miss out! :)


How can I place a special order?

I will try my best to accommodate special orders but it depends on my workflow at that particular time. Just reach out (piesbyjulie@gmail.com or text 503-267-5884) and I'll do my best to make it happen if I can. Please give me at least a week before your desired pick-up date. Special orders carry a 20% upcharge.

 

I placed an order, how do I get it? 

After I receive your order, you will receive an email with 3 different pick-up windows. Please reply to the email as soon as possible with the time that works best for you. Your order will be on my porch at 352 S Howard St SE during that specified time. Orders that aren't picked up will be donated to a local charity organization.

 

Do you deliver? 

Most of the time, yes! Once you sign up for my emails, you'll see a link to purchase the delivery option. If you don't see the link for delivery that means I'm unable to deliver for that offering. The fee is $5 for Kirkwood/Oakhurst and $10 for other neighborhoods (must be within a 10 mi radius of 352 S Howard St SE).

   

Do you make gluten-free, dairy-free or other alternate pies? 

I do often make gluten-free pies! You'll see these listed in my emails when available. I do not currently make dairy-free pies, as my crust is made from butter (it just tastes the best!).

 

Where do you bake your pies? 

I bake out of a commercial kitchen and have all required food safety certifications in addition to business licenses etc. 

 

I bought some merch. Can't I just pick up from you locally and not pay for shipping? 

Unfortunately, no. I use a platform called Printful and they process each order as they come in and ship them from their facility in another state. I don't buy large volumes of my merchandise and stock it locally. I've set the pricing as low as possible in order to keep the prices affordable. Sorry!
